The fermentation of all red and white wines has been going on since 1971 in barrels of high-grade steel with temperature control. In hundreds of small French oak barrels (Barriques) high quality wines are stored and ripe.
Favoured by the partly mediterranean climate and the excellent position on the Southern slopes of the Alps the assortment of Schwanburg castle offers a wide range of good wines: from the classic South Tyrolean Vernatsch and Lagrein, a wide range of excellent white wines to the renommated French wines Pinot Noir and Cabernet Sauvignon.
The wines of the exclusive special line Schwanburg castle are at the top of the quality pyramid and represent a good example of North Italian high class wine culture.Cabernet Sauvignon, Pinot Blanc and Rosenmuskateller from Schwanburg Castle are produced only in limited quantities and from extra good vintages and represent a wine of highest quality and unique identity.

Since 1556 Schwanburg castle has been a symbol for production of quality wines in South Tyrol. Since then excellent wines has been pressed in the old cellars of Schwanburg Castle. Today the wines of the castel have the extraregional reputation of being of excellent quality.
Tradition and innovation, the synthesis of combining old cultural traditions with modern wine production, are the basis for a high quality wine cultur for Mr. Dieter Rudolph.
With a natural cultivation as well as of yield limit quality starts already in the vineyard. 27 hectares of first class vines are properety of the estate. What is called "ecological" today, has been obvious for generations at Schwanburg castle. In the cellar next to wooden barrels from the time of Maria Theresia very modern techniques are being used.
